Good beer takes time

For us at Stallhagen, beer is a craft. The most important tools that our brewmaster possesses are his hands and eyes. The beer is allowed to mature and age for the amount of time that is necessary for it to develop its full-bodied flavour, natural carbonization and the fine head which characterizes a good craft beer.

This is where you can find our beer

Stallhagen beer is sold both in Finland and Sweden, but the distribution of the beer differs due to different legislation. Our cans can only be recycled in Finland and therefore do not exist in Sweden.

BREWERY PHILOSOPHY

Pure raw ingredients make good beer

Our beers are produced using only the original ingredients of malt, hops, and yeast, with pure and healthy local water. Depending upon the beer type, real honey, fresh berries, and fruit may also be added for flavouring. For the skilled and creative brewmaster, these simple ingredients provide infinite possibilities for creating fine craft beer.

What is craft beer?

Stallhagen’s beer is produced using traditional methods in a modern brewery. Our brewmaster, Matte Ekholm, carefully selects the raw ingredients and mixes each brew by hand. Every step in the process, every boiling and every tasting is measured and controlled using the eyes and hands as tools. It is a question of the water, the instruments, flavouring, the live yeast, the temperature, and fermentation...the brewmaster monitors, controls and oversees everything in the brewery.

Hand-made slow beer

At Stallhagen, the fermentation process transpires completely naturally, without chemical additives. We do not artificially add any carbon dioxide. We allow carbon dioxide to form in the yeast naturally as the flavour matures. During our long aging process, the full-bodied flavour develops and carbonization occurs naturally in the beer. The head forms a layer in the top of the glass which preserves the aroma of the beer. The time for the aging process can be four to eight weeks, depending upon the beer type.

The flavour of a location

Our raw water is obtained from Åland’s lakes, including Långsjön, which lies 100 meters from the brewery, and then it is purified into drinking water at the local water company, Ålands Vatten. The water is not chemically treated and is considered to be a component of Stallhagen’s flavour and character.

Centrifugation instead of filtration

Most of our beers are centrifuged rather than filtered. Centrifugation is a gentler process than filtration, which is used to remove unwanted particles, such as hops and yeast remains, without degrading the aroma and flavour.

A film about Stallhagen created in co-operation with shipping company Eckerölinjen. Our production has grown significantly since the film was made, but both our brewmaster Matte Ekholm and our basic idea remain unchanged.

Stallhagen is a microbrewery on Åland, in the middle of the archipelago between Sweden and Finland. As inhabitants of the archipelago, we are used to finding the means to provide for our own needs.
